Sweet fennel is a beautiful tender perennial with feathery thin leaves. Most gardeners, however, grow fennel as an annual and harvest its sweet anise-flavored white bulb. Every part of the plant is edible, and it can be harvested at any time during the season. Trim leaves back to encourage bushier growth and use them in dips, dressings, with fish, and more. Bulbs can be eaten raw or cooked, and add a sweet anise flavor to any dish. Fennel seeds also pack a similar flavor and brighten up sauces and spice rubs.
